Arnold Sports Festival
17This upcoming weekend I will venturing down to Columbus to meetup with fellow FitFluential Ambassadors to check out the Arnold Sports Festival. To say I’m stoked is an understatement.
As a registered veterinary technician I am familiar with the Arnold Sports Festival as it used to be held on the same weekend as the Ohio Veterinary Conference. I have to laugh, because until recently I never imagined that I’d be on the opposite side…attending the Arnold.
Initially I was intimidated by the thought of going and even thought to myself, “What’s the point? I’m not a bodybuilder.” Come to find out, it’s so much more than bodybuilding. There’s gymnastics, crossfit, fencing, zumba…the list goes on. There’s even arm wrestling and ping pong! Crazy.
I’m sure this will be an experience to remember. I hope to do some videos and take photos while I’m down there. Stay Tuned!

Venturing Into Vegetarianism As An Athlete
7As a FitFluential Ambassador I had the opportunity of being a Guest Blogger on the FitFluential Blog. This is the post that was featured. I hope to write more for the FitFluential blog in the future. In the meantime I invite you to not only read this post but the many other posts other ambassadors have written.
I’ve seen so many people push the idea around, yet they ask, “Can I still be an athlete AND a vegetarian/vegan?” I answer that with a resounding, “YES!!”
There are many levels of vegetarianism, from the basic lacto-ovo vegetarian, who still integrates dairy and eggs in their diet, to the strictest vegan, who not only changes their diet, but also their lifestyle to exclude all animal-derived products. Some are driven by moral/ethical issues, others are focused on their health, and for some it’s all the above. Whatever the reason, it is possible to thrive on the lifestyle.
Let’s delve into some concerns that many athletes have:
What about protein?
This is the question that everyone asks. My question in return is always, “How much protein do you think we need?” Most people look at my dumbfounded since they have absolutely no idea and are surprised to find out that the average protein intake of individuals in the U.S. is only 16%. Of course there are those that believe athletes need higher amounts of protein, and I am not going to dispute their opinions. However, what you should know is that you can achieve just as much, if not more, protein from plant-derived sources. For instance, 30% of the calories from spinach are protein, whereas an egg contains 37% of it’s calories as protein. Not much difference.
What about Vitamin B12?
Vitamin B12 deficiency is not limited to vegetarians and vegans, as it is also common to those eating a Standard American Diet. Although Vitamin B12 is found in animal products such as meat, shellfish, milk, cheese, and eggs, many people have a difficult time absorbing the Vitamin B12.
Will I have to take a ton of supplements?
Chances are you won’t be on any more or less supplements than you already are, especially if you are a fitness, health-minded person. Supplementation MAY be required, but I will get to that in a bit.
The diet seems so limiting. What will I eat?
On the contrary, I have found this diet to open my eyes to so many different food options I would’ve never tried before. Kale, quinoa, dates, figs, tofu….the list goes on! Prior to living a vegan diet, I would’ve never given them a second look.
You’d be amazed at how many dishes can be what I call “veganized”. I have found very few dishes that I cannot substitute an animal-derived ingredient with a vegan friendly ingredient. For instance, using Ener G Egg Replacer or making your own egg with other ingredients you already have around the house.
At this day in age there are so many ready-made vegetarian options that no one should go hungry. With that being said, just like a Standard American Diet, it’s easy to be an unhealthy vegetarian. For instance, French fries are considered vegetarian, but that doesn’t mean that you should eat them on a daily basis or that they should be your sole diet.
And for endurance athletes: What about my fueling options during training and racing?
Believe it or not most options are vegetarian and surprisingly many are vegan too! Of course you have the option of the VegaSport line and Chocolate #9 Energy Gels, which are specifically vegan-made. But you also have products such as Hammer Nutrition Gels, Clif Shot Energy Gels, and Clif Shot Bloks, which are oftentimes more readily available. And don’t forget, easy-to-pack dates are a fantastic energy source as are homemade energy bars.

Recently Serena and Venus Williams have even chosen to live a vegan lifestyle for health reasons.
So, are you ready to become a plant strong athlete??
Here are a few helpful hints:
Realize your beliefs may not be accepted by other
Most people are against the idea because they don’t understand the lifestyle. It doesn’t mean that you can’t succeed!
Surround yourself with a support system that encourages your lifestyle change
With the dawn of social media you can “surround yourself” with like-minded people that are either moving towards the same goal or already living the lifestyle. Take advantage of their positive energy and knowledge!
Educate yourself
Read, read, read. Buy several books and soak up the information that they provide. By educating yourself you will feel certain in your decision and when those that doubt your lifestyle raise questions you can confidently answer them.
My favorites: Being Vegetarian for Dummies, Eating Animals, 80/10/10 (raw veganism), and Nutrition and Athletic Performance.
Invest in a few cookbooks
Cooking for a vegetarian lifestyle can be as complex or as simple as you’d like.
Some of my favorite books include The Happy Herbivore Cookbook/Everyday Happy Herbivore, and The Thrive Diet. 
Bookmark some reputable websites
My favorite go-to recipe website is VegWeb. I also frequent No Meat Athlete for plant-based recommendations, recipes, and helpful hints for athletes.
Have routine checkups with blood work
No matter what your lifestyle this is a good idea. Supplementing from the beginning or waiting to supplement after finding where you’re deficient is a hotly debated topic and should be discussed with your doctor. If possible, I would highly recommend blood work to be performed prior to going vegetarian. This will provide you a base line to go off of in the future. I would also recommend blood work be performed a minimum of every 1-2 years as deficiencies may take time to develop. Specific blood values to target: CBC, Iron, B12. Here’s a link to my most recent blood work and what my course of action is regarding the results.
Don’t worry about being perfect
You will have hiccups along the way. Maybe you crave something or maybe the chef at a restaurant puts butter on your vegetables and you don’t realize it. Don’t lose sleep over it! You’re still moving in the direction in which you desire.
Don’t feel overwhelmed
I transitioned to a vegetarian lifestyle in 2008 and never dreamed I’d ever become a vegan. I thought, “How is that even possible?!” Surprisingly after two years of living a vegetarian lifestyle, making small changes, it was only natural for me to become vegan. All the while I was living an active lifestyle as a runner and triathlete. I have not only modified my diet but also my personal care products and clothing. (Search ‘vegetarian’ on this blog and you can see all of my transitions over the past several years) I’m not saying this is the route everyone takes, nor should you. Make this your own journey.

The Proof Is In The Push Ups
12Remember this post? Yes, the one where I spoke about attempting pushups and adding backbends to my workout mix? That was almost 3 months ago. Wonder where I am in regards to my success in pushups and backbends? Watch to find out.
Hard work pays off. Period. Not perfect, but I achieved my initial goal and am on my way to making my form better and increasing my numbers.
I couldn’t have done it without the help of my friends…Specifically Laura! Thank you for you encouragement and words of advice.

I Love It When Products Deliver
11I had absolutely no plans on blogging or doing a video today, but plans change. I went out for my long run of the week today…7 miles. Wait, make that 7 WINDY miles. 24mph winds. Yikes. It was 35 degrees but that wind was wicked. Thankfully I have found some products that not only deliver, but they repeatedly do so. Sometimes I don’t know how I’d do it without them and am truly grateful for them. Also, it’s always fun to try something new and fall in love with it. Just had to share.

RFF – 2/24/12
6This post was rotating around the blogosphere last week due to Valentine’s Day. I figured I’d use the same idea for my RFF this week.
1. How long have you and your significant other been together?
We initially got together in September 1997. We dated until early 1998, went our separate ways, then got back together March 2000. So just over 12 years.
2. How did you meet? {What’s your “love” story?}
We were both in band and met at summer band practice. He was sagging his pants and I said, “I find it so unattractive when guys sag their pants….” As a general statement, targeting him but didn’t necessarily say it to him. Ha! Then when I had an end-of-summer get together at my house he called my best friend to see if he could come. I thought he was hitting on my friend. Little did I know…

3. If married, how long have you been married?
Will be 10 years July 13th of this year.

4. Where did you get married? Big or small wedding?
We had planned to have a long engagement, but when things didn’t go as planned for him in the military we chose to get married…planning a wedding in 2 months. It was small with immediate family and grandparents, on the beach.
5. Do you have any nick-names that you call one another? Do share!
We jokingly started calling each other babe and baby. They unexpectedly stuck.
6. Name 3 things you love most about your honey.
He calms me. He’s the yin to my yang. He’s adventurous.
7. Tell us how he proposed?
I was visiting him on base in NOLA, we were watching TV and he asked to see the ring he had given me a couple years earlier. I gave it to him. He looked at it, switched it out (without me knowing), slipped the engagement ring on my finger and said, “Will you marry me.” My response: “Are you serious?” Ha! I knew his proposal was coming, but couldn’t believe it actually happened.

8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals?
He’s a homemade card kind of guy…with anything he can find, including cardboard boxes. We’re not really into mushy stuff. He has gotten me a stuffed animal or two and also a magic 8 ball.
9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch?
I admit that I would love sunset dinner on the beach but we lean towards watching a movie and chilling on the couch.
10. Tell us one thing you’d like to do with your significant other one day. If you could do anything? Go anywhere?
Travel. We’ve made a dent but are still working on it. Next up, Italy!
12. Give us one piece of advice of keeping a relationship strong and full of love.
Talk, share, communicate, and be honest.
We had a long distance relationship for almost 2 years and survived it through long phone conversations. Although it wasn’t fun at the time, we learned a lot about each other and relationships.
13. Show us a picture of what love means to you.

Planks & Burpees Challenge = Video Fail
2Yes, I love challenging myself. It’s great to have other FitFluential Ambassadors that love challenges too. On YouTube we’re constantly calling each other out to see who can do what. Remember the handstand challenge? Well, this time around Rebekah of BexLife called out for a 2 minute plank and 10 burpees. Yikes! I wasn’t worried about the burpees, but the plank. Hmmm. I’ve been doing planks for a couple months now but my max hold was 1 min 45 sec. Today after my 4 mile run I gave it a go. The good news = I got the 2 minute plank! The bad news = I had a video fail. Poor capturing skills + birds chirping + dogs “helping” me maintain my plank made for an interesting video. If you have a few moments I invite you to watch. I think it will give you a good laugh.
I tried a second take. The good news = it was a better captured video. The bad news = no 2 minute plank this time. Ah well. I had fun doing it. Even the second time around I had a bit of help from the dogs.

Pure Bliss Eats = Blissful
6Last week I finally decided to order something from Pure Bliss Eats. I spoke a little about them in this VLOG, but decided they deserve way more than a few seconds of my time in a VLOG.
Let me start from the basics. Nicole Culver, a fellow FitFluential Ambassador, chose to walk away from her job of teaching to start her own business, Pure Bliss Eats. I’m sure she didn’t necessarily hate her job, she just had an untapped passion that she wanted to pursue. As you know from my previous posts, I am ALL about this idea. Do what you love. Love what you do. Props to Nicole! She does a better job explaining her vision and reasoning behind Pure Bliss Eats in this video.

So proud and happy for Nicole. This takes guts. I kept hearing little things about how good her products were and finally decided to contact her to order some goodies. I had to do a quick check: are her products vegan? She was quick to answer:
I promptly ordered the Instant Boost Chocolate Balls. Holy moley. I fell in love instantly. D and I both agreed they tasted like chocolate and peanut butter. Mmmmm. Even though they are VERY filling, (Seriously, one and done) it was hard not to eat another because they are so good. I’m amazed that they’ve made it past several days in our house. I’ve really had to hold myself back.


Even cooler? She’s actively adding more vegan treats. Yes!

Did Someone Say King Cake?!
13If we currently lived in New Orleans we’d be in full swing Carnival/Mardi Gras mode. Alas, we’re not. But one thing’s for sure…you can take the girl out of NOLA, but you can’t take NOLA out of the girl. The first 2 years of our marriage D was stationed in New Orleans and we LOVED it. I will readily admit I was never a seafood eater (even prior to going vegan) but we still enjoyed the food and atmosphere of the city. One thing we miss greatly is King Cake. If you’ve never had King Cake, you don’t know what you’re missing. There are many styles and kinds, and they’re all good. You can get a King Cake at any time in New Orleans, but Carnival season is when they are everywhere. Unfortunately in Ohio, not so much.
A few years ago we saw they were available at our local grocery store. Although other stores in the chain have continued making them, ours chose not to. We’ve also spent the money on mail-order King Cake. It was ok. A bit dry and nothing to write home about. Now that I’m vegan mail-order or already made King Cakes aren’t an option, so it’s been a few years since our last tasting.
Enter Julie,friend and author of the blog ROJ Running. This week she posted an EASY recipe for King Cake. I knew I could easily veganize it and did so. I have already have had several people ask for the recipe, hence why I’m posting it. With that being said, I don’t want to hijack this from Julie and invite you to visit her blog that has a ton o’ other fun stuff to read about.
Note: Although I have a vegan cream cheese option we chose to omit the powdered sugar/cream cheese mix and just use strawberry squeeze jelly, out of our personal preference. All other necessary ingredients were substituted with vegan options.
King Cake Recipe
Cake
- 2 (8-ounce) cans crescent rolls
- 4 ounces cream cheese
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- 1/3 cup light brown sugar
- 1 tablespoon ground cinnamon
Icing
- 1 cup powdered sugar
- 1-2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1 cup (approx.) granulated sugar
- Green, Yellow and Purple (red/blue) food coloring
2. Separate crescent rolls at perforations, into 16 slices. Place slices around prepared pan with points in center. About halfway down from points, press seams together.
3. In mixing bowl, beat cream cheese, confectioners’ sugar, and vanilla until creamy. Spread on dough in center where seams have been pressed together.
4. In another small bowl, combine butter, brown sugar, and cinnamon with fork until crumbly. Sprinkle over cream cheese. Fold dough points over filling, then fold bottom of triangle over points forming a circular roll like a king cake.
5. Bake 20-25 minutes or until golden brown. Cool slightly.


It seeped a little while cooking, no big deal
2. Drizzle over baked cake.

Next time I’d make the icing more viscous, that way it may stick better

Note: It seems controversial as to whether crescent rolls are vegan. From my research I’ve done it has been noted that they are. Yes, it’s a processed food. But let’s be honest, this isn’t the healthiest of recipes and I’ll readily admit that. A special treat, that is all.

Putting The Fun Back Into Running
14As you know, this past week I posted about doing a Team Sparkle Run. I invited anyone and everyone to wear their Team Sparkle skirts out to run, cycle, etc. It didn’t matter if it was a typical training day or if you had a race. The point: putting the fun back into running. I’m grateful that some people joined in. Some even joined in if they didn’t have Team Sparkle skirts by wearing bright flashy clothing. Fantastic!
I had 6 miles on tap for my half marathon training schedule. It was in the high 30′s to low 40′s, partly cloudy, and 16 mph winds. I decided to wear my turquoise skirt and going with the loud colors = happy theme. I must admit that my non-matching running motif is actually my normal thing. Although I have OCD-like tendencies this doesn’t seem to translate to my running gear. Most days I look like Rainbow Brite when I head out. I took a few pre-run photos. It was quite interesting trying to get a decent shot since I was using the timer function. Let’s just say I worked up a sweat running back and forth to the camera. Ha!
Given I live along the shores of Lake Erie it’s no surprise that almost every running route I take goes past the lake. Sometimes I get to enjoy the view but oftentimes the wind whips off the lake. This run was no different. Thankfully I made it the beginning part of the run so I wouldn’t have to deal with it so much later on in the run. For some reason I couldn’t get a handle on the direction of the wind. And for some reason at mile 2 it really hit me. Simultaneously LMFAO’s “Sexy and I know it” came on my iPod. I couldn’t help but chuckle and think to myself, “Oh yes, I bet I look so sexy right now. Rainbow Brite fighting the whipping wind gusts.” Alas, it ended and the rest of the run was pretty uneventful. I’ll admit my bum and thighs were pretty chafed due to already dry skin and the cold. One of the downsides of northern winters. Even with that it felt excellent to get out there and to ENJOY it. Yes, enjoy.
I shot this video immediately after my run. I tried out Vega Sport Hydrator for the first time. I’m not sure about it yet. It’s not that I don’t necessarily like it, it’s just that I think I prefer non-flavored drinks while working out. i.e. water. I have another sample so I’m going to give that a try. My Instant Boost Chocolate Balls also arrived from my fellow FitFluential Ambassador Nicole Culver. She recently started her own business called Pure Bliss Eats. I love the concept. I love the balls. More to come on that =)
I went ahead and continued the fun, sparkly, crazy colored energy today while taking to my bike trainer for an hour ride. I got 13+ miles in and felt pretty darn good. I really need to work on my endurance with the bike. I thought the bike would be the “easiest” for me when it comes to the triathlon. Needless to say I think it may be the hardest. But that’s something to discuss in another post. Either way, I was able to get a few shots of myself riding today in my Team Sparkle skirt. (Believe it or not these are the first ever photos I’ve had taken while “riding”. I’m taking note of some things I need to work on….Please, no harsh criticisms on my form. Remember, I’m still new to my bike and really cycling in general.)

This concludes Week 3 in my half marathon training. I’m glad I chose to mix things up by adding in my Team Sparkle skirt and think I’ll do it more often. I hope others joined in and found the same thing. I feel good heading into Week 4. Things may get interesting in Week 5 since I’ll be heading down to Columbus to meetup with other FitFluential Ambassadors for the Arnold Sports Festival. (Beyond psyched for this!!) But we’ll cross that bridge when we get there.

Coach’s Oats Ideas – Giveaway Results
2Earlier this week I gave you my thoughts on Coach’s Oat and asked how you like your oats. I really appreciated the feedback and see that I need to mix up my oatmeal a bit more.
Some of your favorites I’d definitely like to try…
Christina Rico:
-1/2 tbs. unsweetened cocoa powder
-chocolate almond milk
-stevia
-1/2 tbs peanut butter
-and sliced banana!
Chocolate…need I say more?
SheRocksFitness:
-1/2 c oats
-1 diced banana
-1 T chia seeds
-Dash of Cinnamon and Vanilla
-1 “heaping” T of any sort of nut butter
You had me at banana.
Where’s The Beach?:
-add in PB
-some protein powder
-cinnamon
-sweeten with stevia
-stir in cinnamon apples (apples, cinnamon, liquid vanilla stevia, microwave 30 secs)
Cinnamon + Apples = YUM!
James:
-1/3 cup coach’s oats
-2/3 cup water
-1/3 coconut milk
-1/2 cup pumpkin
-dash salt
-raisins
-1tsp cinnamon
-1/2 tsp nutmeg
-soak all that overnight
-next morning heat it up
-add 2 packets of stevia and some maple syrup
-sprinkle walnuts on top
I must admit that James’ is most involved but sounds VERY yummy!
